In the last stage, when the last fruits start ripening you can trim the plant one more time to give it one last boost of energy. This will accelerate the ripening process and your tomatoes will grow big and delicious.

The opinions on this subject seem to be very controversial. Interestingly, people have been very successful with both methods: stripping the plant of most of its leaves, or not removing any of them. But what seems more logical or healthy for the plant?
